The seafood counter is the heart of the evening, built around what the boats brought in that morning — prawns, crab and the day’s catch on ice. Beside it, roasts carved to order, stations drawing on Christmas tables from around the world, and a dessert spread worth a slow walk before you choose.

Music, fire and a visit from Santa

A live band plays through dinner and a live DJ carries the evening on from there. Down on the sand, a fire dance show lights up the shoreline.

And then Santa arrives — by air, in the Flying Santa Performance. It is the moment the children remember, and the one the cameras come out for.
